Ingredients

  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 8 slices bread

Instructions

  1. In a large bowl, combine shredded chicken, mayonnaise, Greek yogurt, and Dijon mustard.
  2. Add celery, red onion, dill, parsley, salt, and pepper. Mix until well combined.
  3. Spread the chicken salad mixture on 4 slices of bread.
  4. Top with remaining slices of bread, then cut each sandwich into quarters.
  5. Serve immediately or chill before serving.
