Ingredients

- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon Dijon mustard
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 8 slices bread
Instructions
- In a large bowl, combine shredded chicken, mayonnaise, Greek yogurt, and Dijon mustard.
- Add celery, red onion, dill, parsley, salt, and pepper. Mix until well combined.
- Spread the chicken salad mixture on 4 slices of bread.
- Top with remaining slices of bread, then cut each sandwich into quarters.
- Serve immediately or chill before serving.
Notes
- For a lighter option, use low-fat mayonnaise.
- These sandwiches are best served fresh.
