Description

Ingredients

  • 4 large potatoes, diced
  • 6 slices turkey bacon, cooked and crumbled
  • 1 cup sharp cheddar cheese, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced potatoes and cook until slightly tender, about 5 minutes.
  2. Add minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are fully cooked, about 15 minutes.
  4. Stir in the heavy cream, cheddar cheese, crumbled turkey bacon, thyme, parsley, salt, and pepper. Cook until cheese is melted and soup is heated through.
  5. Serve hot, garnished with additional turkey bacon and cheese if desired.

Notes

  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
  • You can add more herbs like chives or dill for extra flavor.
