A comforting and flavorful potato soup loaded with cheddar cheese, garlic, herbs, and crispy turkey bacon.

- 4 large potatoes, diced
- 6 slices turkey bacon, cooked and crumbled
- 1 cup sharp cheddar cheese, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add diced potatoes and cook until slightly tender, about 5 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a boil. Reduce heat and simmer until potatoes are fully cooked, about 15 minutes.
- Stir in the heavy cream, cheddar cheese, crumbled turkey bacon, thyme, parsley, salt, and pepper. Cook until cheese is melted and soup is heated through.
- Serve hot, garnished with additional turkey bacon and cheese if desired.
Notes
- For a vegetarian version, omit the turkey bacon and use vegetable broth.
- You can add more herbs like chives or dill for extra flavor.
