  • 250 ml boiling water
  • 1 teaspoon baking soda
  • 100 grams unsalted butter, softened
  • 150 grams brown sugar
  • 2 large eggs
  • 200 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Pour the boiling water over the pitted dates in a mixing bowl and add the baking soda. Let it sit for about 10 minutes.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Incorporate the flour and baking powder, then fold in the date mixture and vanilla extract.
  6. Pour the batter into a greased baking dish and bake for about 30-35 minutes until a skewer comes out clean.
  7. While it bakes, prepare the toffee sauce by heating cream and brown sugar in a pan until it thickens.
  8. Once the pudding is done, let it cool slightly, then pour the toffee sauce over it before serving.
