- 250 ml boiling water
- 1 teaspoon baking soda
- 100 grams unsalted butter, softened
- 150 grams brown sugar
- 2 large eggs
- 200 grams all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 180°C (350°F).
- Pour the boiling water over the pitted dates in a mixing bowl and add the baking soda. Let it sit for about 10 minutes.
- In another bowl, cream together the butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Incorporate the flour and baking powder, then fold in the date mixture and vanilla extract.
- Pour the batter into a greased baking dish and bake for about 30-35 minutes until a skewer comes out clean.
- While it bakes, prepare the toffee sauce by heating cream and brown sugar in a pan until it thickens.
- Once the pudding is done, let it cool slightly, then pour the toffee sauce over it before serving.
