  • 1 cup chopped pecans
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup orange juice
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the melted butter and sugar until combined.
  3. Add the eggs and orange juice, and mix well.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the cranberries and pecans.
  7. Divide the batter evenly into the muffin tin.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

Notes

  • For a sweeter muffin, consider increasing the sugar.
