Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the melted butter and sugar until combined.
- Add the eggs and orange juice, and mix well.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the cranberries and pecans.
- Divide the batter evenly into the muffin tin.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Notes
- For a sweeter muffin, consider increasing the sugar.
