- 2 cups jasmine rice
- 1 can coconut milk
- 1 cup chicken broth
- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Rinse the jasmine rice until the water runs clear.
- In a large pot, combine the coconut milk, chicken broth, and salt; bring to a boil.
- Add the rinsed rice and stir gently.
- Reduce the heat to low, cover, and simmer for 18-20 minutes.
- Meanwhile, cook the turkey bacon in a skillet until crispy, then crumble.
- Once rice is cooked, fluff with a fork and gently stir in the chicken ham and crumbled turkey bacon.
- Drizzle olive oil over the rice, mix well, and serve.
Notes
- For extra flavor, add a pinch of cayenne pepper.
