  • 1 can coconut milk
  • 1 cup chicken broth
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Rinse the jasmine rice until the water runs clear.
  2. In a large pot, combine the coconut milk, chicken broth, and salt; bring to a boil.
  3. Add the rinsed rice and stir gently.
  4. Reduce the heat to low, cover, and simmer for 18-20 minutes.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy, then crumble.
  6. Once rice is cooked, fluff with a fork and gently stir in the chicken ham and crumbled turkey bacon.
  7. Drizzle olive oil over the rice, mix well, and serve.
