- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flours, sugar, baking powder, baking soda, salt, and ground cinnamon.
- In another bowl, combine the melted butter, eggs, vanilla extract, and buttermilk.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- In a small bowl, mix the brown sugar and ground cinnamon for the topping.
- Fill each muffin cup halfway with batter, sprinkle a layer of the brown sugar mixture, then add more batter to fill the cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Allow to cool for a few minutes before serving.
Notes
- For an extra kick, add chopped nuts or chocolate chips to the batter.
- These muffins can be frozen and reheated for a quick breakfast.
