Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flours, sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. In another bowl, combine the melted butter, eggs, vanilla extract, and buttermilk.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. In a small bowl, mix the brown sugar and ground cinnamon for the topping.
  6. Fill each muffin cup halfway with batter, sprinkle a layer of the brown sugar mixture, then add more batter to fill the cups.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before serving.
