- 1 pound boneless chicken breast, cubed
- 1 cup cashews
- 1 cup bell peppers, sliced
- 1/2 cup onion, diced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 1 teaspoon ginger, minced
Instructions
- In a bowl, combine the cubed chicken with soy sauce and cornstarch. Let it marinate for 15 minutes.
- Heat vegetable oil in a large pan over medium-high heat. Add the marinated chicken and cook until golden brown.
- Add garlic, ginger, bell peppers, and onion to the pan. Stir-fry for 5-7 minutes.
- Add cashews and sesame oil. Cook for another 2-3 minutes.
- Serve hot over cooked rice or noodles.

- For extra flavor, add a splash of rice vinegar.
- You can add more vegetables like broccoli or carrots.
