  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup diced apples
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup streusel topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine all the dry ingredients.
  3. In another bowl, mix the wet ingredients together.
  4. Combine the wet and dry ingredients and gently fold in the diced apples and nuts.
  5. Divide the batter evenly into the muffin tins and sprinkle with streusel topping.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
