Delightfully easy small batch Apple Pumpkin Streusel Muffins, perfect for fall baking.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 large egg
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1/2 cup diced apples
- 1/4 cup chopped nuts (optional)
- 1/4 cup streusel topping
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a mixing bowl, combine all the dry ingredients.
- In another bowl, mix the wet ingredients together.
- Combine the wet and dry ingredients and gently fold in the diced apples and nuts.
- Divide the batter evenly into the muffin tins and sprinkle with streusel topping.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- These muffins are best served warm.
- Try adding chocolate chips for extra flavor.
