- 2 cups all-purpose flour
- 1/4 cup coconut oil
- 1/4 cup maple syrup
- 1/2 teaspoon salt
- 1/4 cup cold water
- 1 cup pumpkin puree
- 1 teaspoon pumpkin spice
- 1/2 teaspoon vanilla extract
- 1/2 cup powdered sugar (for glazing)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine flour, coconut oil, maple syrup, and salt.
- Add cold water gradually until the dough forms.
- Roll the dough out on a floured surface and cut into rectangles.
- In a separate bowl, mix pumpkin puree, pumpkin spice, and vanilla extract.
- Spoon pumpkin filling onto half of the rectangles, then place the other halves on top.
- Seal the edges with a fork and make a few slits on top.
- Bake for 20-25 minutes until golden brown.
- Let cool, then glaze with powdered sugar.
Notes
- For extra flavor, add a pinch of nutmeg to the filling.
- These pop tarts can be refrigerated for up to 5 days.
