Ingredients

  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt
  • 1/4 cup cold water
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glazing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine flour, coconut oil, maple syrup, and salt.
  3. Add cold water gradually until the dough forms.
  4. Roll the dough out on a floured surface and cut into rectangles.
  5. In a separate bowl, mix pumpkin puree, pumpkin spice, and vanilla extract.
  6. Spoon pumpkin filling onto half of the rectangles, then place the other halves on top.
  7. Seal the edges with a fork and make a few slits on top.
  8. Bake for 20-25 minutes until golden brown.
  9. Let cool, then glaze with powdered sugar.
