A vibrant and healthy Thai Quinoa Salad that’s easy to make and perfect for any meal.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup diced cucumber
- 1 cup diced bell pepper
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup toasted peanuts
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 tablespoon sesame oil
Instructions
- Rinse the quinoa under cold water.
- In a pot, bring the water to a boil, add quinoa, cover, and simmer for 15 minutes.
- Fluff the quinoa with a fork and let it cool.
- In a large bowl, combine the cooled quinoa, cucumber, bell pepper, cilantro, green onions, and peanuts.
- In a small bowl, whisk together the soy sauce, lime juice, honey, and sesame oil.
- Pour the dressing over the salad and toss to combine.
- Chill for 30 minutes before serving.

- This salad can be served cold or at room temperature.
