Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup diced cucumber
  • 1 cup diced bell pepper
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup toasted peanuts
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, bring the water to a boil, add quinoa, cover, and simmer for 15 minutes.
  3. Fluff the quinoa with a fork and let it cool.
  4. In a large bowl, combine the cooled quinoa, cucumber, bell pepper, cilantro, green onions, and peanuts.
  5. In a small bowl, whisk together the soy sauce, lime juice, honey, and sesame oil.
  6. Pour the dressing over the salad and toss to combine.
  7. Chill for 30 minutes before serving.
