- 1 cup pumpkin puree
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, sugars, and oil until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
- Fold in the walnuts if using.
- Pour the batter into mini loaf pans, filling them about 2/3 full.
- For the cinnamon swirl, mix 2 tablespoons of sugar with 1 teaspoon of cinnamon and sprinkle it on top of each loaf.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before removing from pans.
Notes
- For a richer flavor, consider adding a pinch of ginger or allspice to the batter.
- Store in an airtight container for up to 5 days.
