Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, sugars, and oil until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
  6. Fold in the walnuts if using.
  7. Pour the batter into mini loaf pans, filling them about 2/3 full.
  8. For the cinnamon swirl, mix 2 tablespoons of sugar with 1 teaspoon of cinnamon and sprinkle it on top of each loaf.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let cool before removing from pans.

  • For a richer flavor, consider adding a pinch of ginger or allspice to the batter.
