  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups potatoes, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble it once cooled.
  2. In the same pot, add the onion, carrots, and celery. Cook until softened.
  3. Add garlic and cook for another minute.
  4. Pour in the chicken broth, and add the potatoes, thyme, and rosemary. Bring to a boil.
  5. Reduce heat and simmer until potatoes are tender.
  6. Stir in the chicken ham, frozen peas, and crumbled turkey bacon. Cook for another 5 minutes.
  7. Season with salt and pepper to taste before serving.
