- 4 slices turkey bacon
- 1 cup chicken ham, diced
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups potatoes, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 cup frozen peas
- Salt and pepper to taste
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and crumble it once cooled.
- In the same pot, add the onion, carrots, and celery. Cook until softened.
- Add garlic and cook for another minute.
- Pour in the chicken broth, and add the potatoes, thyme, and rosemary. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Stir in the chicken ham, frozen peas, and crumbled turkey bacon. Cook for another 5 minutes.
- Season with salt and pepper to taste before serving.
