- 2 cups California grapes
- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and chop the sweet potatoes into bite-sized pieces.
- In a large bowl, toss the sweet potatoes with olive oil, salt, black pepper, garlic powder, and dried thyme.
- Spread the sweet potatoes on a sheet pan in a single layer.
- Roast sweet potatoes in the oven for 20 minutes.
- Add the California grapes to the sheet pan and mix gently.
- Return to the oven and roast for an additional 10-15 minutes until everything is tender and slightly caramelized.
- Remove from oven and let cool slightly before serving.
Notes
- For extra flavor, add a sprinkle of feta cheese before serving.
- You can substitute other types of grapes if desired.
