Description

A delightful combination of roasted California grapes and sweet potatoes, perfect as a side dish or snack.


Ingredients

  • 2 cups California grapes
  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the sweet potatoes into bite-sized pieces.
  3. In a large bowl, toss the sweet potatoes with olive oil, salt, black pepper, garlic powder, and dried thyme.
  4. Spread the sweet potatoes on a sheet pan in a single layer.
  5. Roast sweet potatoes in the oven for 20 minutes.
  6. Add the California grapes to the sheet pan and mix gently.
  7. Return to the oven and roast for an additional 10-15 minutes until everything is tender and slightly caramelized.
  8. Remove from oven and let cool slightly before serving.

Notes

  • For extra flavor, add a sprinkle of feta cheese before serving.
