- 1 pound chicken breast, diced
- 1 cup cashews
- 2 cups broccoli florets
- 1 bell pepper, sliced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 teaspoon sesame oil
- sesame seeds for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken, cashews, broccoli, bell pepper, soy sauce, honey, olive oil, garlic, ginger, and sesame oil.
- Toss everything until well coated, then spread evenly on a sheet pan.
- Bake for 20-25 minutes, until the chicken is cooked through.
- Garnish with sesame seeds before serving.

- For extra flavor, marinate the chicken for 30 minutes before cooking.
