Ingredients

  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 red bell pepper, diced
  • 1 tablespoon taco seasoning
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine the quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes or until the quinoa is fluffy.
  3. In a large bowl, combine the cooked quinoa, black beans, corn, diced red bell pepper, and taco seasoning.
  4. Toss together and adjust seasoning with salt, pepper, and lime juice.
  5. Serve in bowls and top with avocado slices and chopped cilantro.
