- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 red bell pepper, diced
- 1 tablespoon taco seasoning
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine the quinoa and vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes or until the quinoa is fluffy.
- In a large bowl, combine the cooked quinoa, black beans, corn, diced red bell pepper, and taco seasoning.
- Toss together and adjust seasoning with salt, pepper, and lime juice.
- Serve in bowls and top with avocado slices and chopped cilantro.

- For added flavor, grill the bell pepper before adding it to the bowl.
