Quinoa Apple Salad: A Fruity, Fresh & Flavor-Packed Favorite
Ingredients

- 1 cup quinoa
- 2 cups water
- 2 apples, diced
- 1/2 cup walnuts, chopped
- 1/4 cup cranberries
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water, bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine the cooked quinoa, diced apples, walnuts, cranberries, parsley, and feta cheese.
- Drizzle with olive oil and lemon juice, then season with salt and pepper.
- Toss everything together until well combined.
- Serve immediately or refrigerate for later.
Notes
- Can substitute walnuts with pecans for a different flavor.
- For a vegan option, omit the feta cheese.
