Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 4 large egg yolks

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, combine pumpkin puree, heavy cream, milk, sugar, and spices over medium heat.
  3. In a bowl, whisk together egg yolks and vanilla extract.
  4. Gradually add the warm pumpkin mixture to the egg yolks, whisking continuously.
  5. Pour the mixture into ramekins and place them in a baking dish.
  6. Fill the baking dish with water halfway up the sides of the ramekins.
  7. Bake for about 40 minutes, or until set.
  8. Allow to cool, then refrigerate for 2 hours before serving.
