- 1 cup pumpkin puree
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup sugar
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 325°F (160°C).
- In a saucepan, combine pumpkin puree, heavy cream, milk, sugar, and spices over medium heat.
- In a bowl, whisk together egg yolks and vanilla extract.
- Gradually add the warm pumpkin mixture to the egg yolks, whisking continuously.
- Pour the mixture into ramekins and place them in a baking dish.
- Fill the baking dish with water halfway up the sides of the ramekins.
- Bake for about 40 minutes, or until set.
- Allow to cool, then refrigerate for 2 hours before serving.
Notes
- For a richer flavor, consider using fresh pumpkin instead of canned.
- Top with whipped cream for an extra indulgent touch.
