This delicious overnight casserole combines the fresh flavors of blueberries and lemon, perfect for a special breakfast or brunch.
Ingredients

- 1 loaf challah bread
- 2 cups blueberries
- 1 lemon, zested and juiced
- 6 large eggs
- 2 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 8 ounces turkey bacon
Instructions
- Grease a 9×13 inch baking dish.
- Cut the challah into cubes and place half in the dish.
- Sprinkle half of the blueberries and half of the lemon zest over the bread.
- In a bowl, whisk together the eggs, milk, sugar, vanilla, salt, and lemon juice.
- Pour the egg mixture over the bread and blueberries, then top with remaining bread, blueberries, and lemon zest.
- Cover and refrigerate overnight.
- The next morning, preheat the oven to 350°F (175°C).
- Bake uncovered for 45 minutes or until set.
- Meanwhile, cook the turkey bacon according to package instructions.
- Serve the casserole warm with strips of turkey bacon on the side.
Notes
- Make sure to let the casserole rest before serving for better cutting.
- You can substitute other berries based on your preference.
