- 4 chicken breasts
- 1/2 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- In a large bowl, whisk together balsamic vinegar, olive oil, garlic, thyme, salt, and pepper.
- Add the chicken breasts to the marinade and let sit for at least 30 minutes.
- Heat a large skillet over medium heat and add the marinated chicken, cooking for about 6-7 minutes on each side until cooked through.
- Add cherry tomatoes and spinach to the skillet during the last few minutes of cooking, allowing them to wilt.
- Serve immediately, drizzling with any remaining sauce from the pan.
