A delicious and comforting Mexican Street Corn Soup made with Turkey Bacon.


Ingredients

  • 4 cups corn kernels
  • 1 cup diced turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the corn kernels, broth, and spices. Bring to a boil.
  4. Reduce heat and stir in the heavy cream.
  5. Blend the soup until smooth, if desired.
  6. Reheat and serve garnished with turkey bacon and cilantro.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Can be served with tortilla chips for added crunch.
