A delicious and comforting Mexican Street Corn Soup made with Turkey Bacon.
Ingredients

- 4 cups corn kernels
- 1 cup diced turkey bacon
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, sauté the onion and garlic until translucent.
- Add the corn kernels, broth, and spices. Bring to a boil.
- Reduce heat and stir in the heavy cream.
- Blend the soup until smooth, if desired.
- Reheat and serve garnished with turkey bacon and cilantro.
Notes
- For a vegetarian version, omit the turkey bacon.
- Can be served with tortilla chips for added crunch.
