Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and maple syrup until smooth.
- Add the pumpkin puree and egg, mixing well.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool on a wire rack before serving.
Notes
- For a stronger maple flavor, add a bit more maple syrup.
- Store the cookies in an airtight container to maintain softness.
