- 1 pound lobster meat
- 1 cup diced potatoes
- 1 cup chopped carrots
- 1 cup peas
- 1/2 cup diced onion
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups seafood stock
- 1 cup heavy cream
- 1 teaspoon Old Bay seasoning
- 1 pie crust
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot, melt the butter over medium heat, then add the onions and cook until soft.
- Add the potatoes, carrots, and peas, and sauté for about 5 minutes.
- Stir in the flour and cook for another minute.
- Add the seafood stock and heavy cream, stirring until the mixture is thickened.
- Fold in the lobster meat and Old Bay seasoning. Season with salt and pepper to taste.
- Pour the mixture into a pie dish and cover with the pie crust, sealing the edges.
- Cut slits in the top of the crust to allow steam to escape.
- Bake for 25-30 minutes until the crust is golden brown.
- Let it cool slightly before serving.
Notes
- This pot pie can be made ahead and reheated.
- Feel free to use frozen vegetables if fresh ones are not available.
