Ingredients

- 1 cup lentils
- 2 tablespoons olive oil
- 1 large onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon thyme
- 6 cups vegetable broth
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Sauté until soft.
- Stir in garlic, cumin, and thyme; cook for 1 minute.
- Add lentils and broth. Bring to a boil, then reduce heat and simmer for 25 minutes.
- Stir in spinach and cook until wilted. Season with salt and pepper.
