Ingredients

  • 1 cup leftover cranberry sauce
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the cranberry sauce, melted butter, eggs, and vanilla until well combined.
  3. In another bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the walnuts.
  6. Divide the batter evenly among the prepared muffin cups.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a sweeter muffin, add more sugar to the batter.
