- 1 pound boneless chicken breast
- 4 slices turkey bacon
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
Instructions
- Cook the turkey bacon in a skillet until crispy, then remove and set aside.
- In the same skillet, cook the chicken breast until golden brown and cooked through.
- Add the onion, bell pepper, and garlic; sauté until softened.
- Stir in the rice, chicken broth, and Cajun seasoning; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Stir in the heavy cream and cooked turkey bacon; cook for an additional 5 minutes.
- Serve hot and enjoy!
