A fresh and flavorful grilled balsamic steak salad featuring creamy gorgonzola and sweet corn.
Ingredients

- 1 pound flank steak
- 2 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels, fresh or frozen
- 1/2 cup crumbled gorgonzola cheese
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Marinate the flank steak in balsamic vinegar, olive oil, salt, and pepper for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the steak for about 5-7 minutes on each side until desired doneness is reached.
- Remove the steak from the grill and let it rest for 5 minutes before slicing.
- In a large bowl, combine salad greens, cherry tomatoes, corn, and gorgonzola cheese.
- Slice the grilled steak thinly against the grain and place on top of the salad.
- Drizzle with extra balsamic vinegar if desired and serve immediately.
Notes
- For added flavor, consider adding avocado or nuts to the salad.
- This salad works well with leftover steak from another meal.
