Ingredients

  • 4 bell peppers
  • 1 pound ground chicken
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1/2 cup feta cheese, crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat and add the ground chicken.
  4. Cook the chicken until browned, then add the cooked quinoa, diced tomatoes, feta, garlic powder, onion powder, oregano, salt, and pepper.
  5. Mix well and stuff the bell peppers with the chicken mixture.
  6. Place the stuffed peppers in a baking dish and cover with aluminum foil.
  7. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
  8. Serve warm.
