- 4 bell peppers
- 1 pound ground chicken
- 1 cup cooked quinoa
- 1 cup diced tomatoes
- 1/2 cup feta cheese, crumbled
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, heat olive oil over medium heat and add the ground chicken.
- Cook the chicken until browned, then add the cooked quinoa, diced tomatoes, feta, garlic powder, onion powder, oregano, salt, and pepper.
- Mix well and stuff the bell peppers with the chicken mixture.
- Place the stuffed peppers in a baking dish and cover with aluminum foil.
- Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes.
- Serve warm.
Notes
- For added flavor, top with more feta before baking.
- Feel free to use ground turkey or beef as a substitute for chicken.
