Ingredients

  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed espresso, cooled
  • 2 tablespoons coffee liqueur (optional)
  • 1 package ladyfinger cookies
  • 2 tablespoons cocoa powder, for dusting

Instructions

  1. In a mixing bowl, beat the heavy cream until soft peaks form.
  2. In another bowl, mix mascarpone cheese, sugar, and vanilla extract until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture.
  4. Combine the espresso and coffee liqueur in a shallow dish.
  5. Dip each ladyfinger into the espresso mixture briefly and layer them in a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Layer half of the fresh raspberries over the mascarpone.
  8. Repeat the layers with remaining ladyfingers, mascarpone, and raspberries.
  9. Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.
