- 1 cup brewed espresso, cooled
- 2 tablespoons coffee liqueur (optional)
- 1 package ladyfinger cookies
- 2 tablespoons cocoa powder, for dusting
Instructions
- In a mixing bowl, beat the heavy cream until soft peaks form.
- In another bowl, mix mascarpone cheese, sugar, and vanilla extract until smooth.
- Gently fold the whipped cream into the mascarpone mixture.
- Combine the espresso and coffee liqueur in a shallow dish.
- Dip each ladyfinger into the espresso mixture briefly and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers.
- Layer half of the fresh raspberries over the mascarpone.
- Repeat the layers with remaining ladyfingers, mascarpone, and raspberries.
- Dust the top with cocoa powder and refrigerate for at least 4 hours before serving.
