- 4 large bell peppers
- 1 pound ground beef
- 1 cup cooked rice
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups shredded cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Stir in the diced tomatoes, cooked rice, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Cut the bell peppers in half and remove the seeds. Place them cut-side up in a baking dish.
- Fill each pepper half with the beef and rice mixture.
- Top with shredded cheese.
- Bake for 25-30 minutes until the peppers are tender and the cheese is melted.
Notes
- For extra flavor, add some chili flakes to the beef mixture.
- Feel free to substitute the ground beef with turkey or plant-based meat alternatives.
