- 1 cup dry lentils
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 cups spinach
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the onion, garlic, carrots, and celery, and sauté until softened.
- Stir in the lentils, thyme, cumin, and smoked paprika.
- Add the vegetable broth and tomatoes, bringing to a boil.
- Reduce heat and simmer for about 30 minutes, or until lentils are tender.
- Stir in the spinach and cook until wilted. Season with salt and pepper.
