Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 8 hoagie rolls
  • 8 slices provolone cheese

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
  2. Place the sliced onion and minced garlic in the bottom of the Crock Pot.
  3. Add the seared beef roast on top of the onions and garlic.
  4. In a bowl, mix together beef broth, soy sauce, Worcestershire sauce, and bay leaf. Pour over the roast.
  5. Cook on low for 7-8 hours or high for 4-5 hours until the beef is tender.
  6. Remove the beef, shred it with two forks, and return it to the pot to soak in the juices.
  7. Serve on hoagie rolls topped with provolone cheese.

  • For added flavor, consider adding fresh herbs like thyme or rosemary.
  • Serve with a side of au jus for dipping.
