Ingredients

- 2 medium zucchinis
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup breadcrumbs
- 2 eggs
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the zucchinis into rounds.
- In a bowl, mix the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- In another bowl, beat the eggs.
- Dip the zucchini slices in the eggs, then in the Parmesan mixture, coating them well.
- Place the coated zucchini slices on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until golden brown and crispy.
Notes
- For extra crispiness, broil for 2-3 minutes at the end.
- Serve with marinara sauce for dipping.
