Ingredients

  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 eggs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchinis into rounds.
  3. In a bowl, mix the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip the zucchini slices in the eggs, then in the Parmesan mixture, coating them well.
  6. Place the coated zucchini slices on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes or until golden brown and crispy.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end.
