These Cinnamon Roll Muffins are the perfect cozy breakfast treat. They are easy to make and deliver the warm flavors of cinnamon rolls in muffin form.

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar, for filling
- 1 tablespoon ground cinnamon, for filling
- 1/2 cup powdered sugar, for glaze
- 1–2 tablespoons milk, for glaze
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
- In another bowl, combine the melted butter, eggs, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients, mixing until just combined.
- In a small bowl, mix together the brown sugar and cinnamon for the filling.
- Fill each muffin cup halfway with batter, sprinkle with the cinnamon-sugar filling, then top with more batter until each cup is filled about 3/4 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes, then drizzle with the glaze made from powdered sugar and milk.
Notes
- For an extra treat, add nuts or chocolate chips to the batter.
- These muffins are best enjoyed fresh, but can be stored in an airtight container.
