  • 8 ounces dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 cup raspberries, puréed
  • 1/4 cup powdered sugar
  • 1 tablespoon vanilla extract
  • cocoa powder, for dusting

Instructions

  1. Heat the heavy cream in a saucepan over medium heat until it begins to simmer.
  2. Remove from heat and add chopped dark chocolate. Stir until smooth.
  3. Mix in raspberry purée, powdered sugar, and vanilla extract.
  4. Chill the mixture in the refrigerator until firm.
  5. Once firm, scoop out small portions and roll them into balls.
  6. Roll each ball in cocoa powder to coat.
  7. Refrigerate the truffles until ready to serve.

Notes

  • For extra flavor, add a pinch of sea salt to the chocolate mixture.
  • These truffles can also be rolled in crushed nuts or chocolate sprinkles.
