- 8 ounces dark chocolate, chopped
- 1/2 cup heavy cream
- 1 cup raspberries, puréed
- 1/4 cup powdered sugar
- 1 tablespoon vanilla extract
- cocoa powder, for dusting
Instructions
- Heat the heavy cream in a saucepan over medium heat until it begins to simmer.
- Remove from heat and add chopped dark chocolate. Stir until smooth.
- Mix in raspberry purée, powdered sugar, and vanilla extract.
- Chill the mixture in the refrigerator until firm.
- Once firm, scoop out small portions and roll them into balls.
- Roll each ball in cocoa powder to coat.
- Refrigerate the truffles until ready to serve.
Notes
- For extra flavor, add a pinch of sea salt to the chocolate mixture.
- These truffles can also be rolled in crushed nuts or chocolate sprinkles.
