Instructions

  1. In a mixing bowl, combine pumpkin puree, peanut butter, maple syrup, and vanilla extract.
  2. Melt the dark chocolate chips in a microwave-safe bowl or double boiler.
  3. Line a muffin tin with paper liners.
  4. Pour a small amount of melted chocolate into each liner, then add a spoonful of the pumpkin mixture.
  5. Top with more melted chocolate to cover the filling completely.
  6. Chill in the refrigerator until set, about 30 minutes.

Notes
